Good morning! You know what day it is! It’s #foodiefriday. I had to start the day with a #repost of these homemade Japanese souffle pancakes from @eataustinlocal which look so #pictureworthy . I could dive into this plate right about now, with a cup of Joe, black of course! She noted that her recipe topped the ones that she had in NYC. Wow! She describes them this way:⠀

These blew away the ones I had in NYC. Light, airy, perfectly jiggly, HUGE, and the blueberry compote paired so well with it and the cheese mousse.
There is a warning they may take 15-20 minutes to make so start early.⠀
